There is a functionality called "Single Mailbox Backup".  This would only work on Exchange versions up to Exchange 2007

Your best bet is to backup the entire catabase,  If you need to restore a single mailbox, there is new functionality called "Exchange GRE (Granular Recovery Extension)"
